Directions
  1. Preheat oven to 425 degrees F.

  2. Line a baking sheet with tin foil or parchment paper & spray it with an oil spray.

  3. Remove the skin from the salmon.

  4. Cut salmon into bite sized pieces.

  5. In a small bowl, whisk egg with a fork until smooth.

  6. In a second larger bowl, combine coconut, almond flour, and salt.

  7. Dip salmon pieces first in egg, then add pieces to the bowl with the flour and coconut. Mix with a spoon until pieces are all coated.

Directions
