Directions
Preheat oven to 425 degrees F.
Line a baking sheet with tin foil or parchment paper & spray it with an oil spray.
Remove the skin from the salmon.
Cut salmon into bite sized pieces.
In a small bowl, whisk egg with a fork until smooth.
In a second larger bowl, combine coconut, almond flour, and salt.
Dip salmon pieces first in egg, then add pieces to the bowl with the flour and coconut. Mix with a spoon until pieces are all coated.
Add salmon pieces to the baking sheet. Also add salmon skin to the baking sheet to cook separately (it’s delicious and good for you!).
Bake for ~15 minutes, until salmon flakes easily.
Serve carrots and celery on the side with dressing.

This recipe works best when making 2-3 servings
Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
In a small bowl, stir/mash together the cream cheese and shredded cheeses (microwave the cream cheese for a few seconds first).
Fill the jalapeno halves with mixture and wrap each with ½ strip bacon. Place onto baking sheet.

Directions
Make side salad with 1 Tbsp peanut sauce, lettuce, and ½ cups carrots.
Spray a pan with an oil spray. Cut chicken into small pieces. Cook on stove top for 7-8 minutes, stirring frequently until cooked through.
