Planning a wedding can be a tedious and challenging task, and finalizing the wedding menu planning for your big day can take up most of your time and money.

Depending on your guests and their food preferences, you might also need to include some vegan options in your wedding menu, so all of your guests can have a delicious meal to eat.

Serving vegan dishes is a great way to diversify your spread, appease your guests, include sustainable options, and make sure everyone can have food they like (and food they can eat).

However, it can also make mapping your wedding menu more challenging, as you not only have to decide on your entire manu, but you also have to come up with delicious vegan wedding meals as well.

Portobello Pizzas

To make this recipe vegan, simply use vegan cheese instead of regular mozzarella! Just make sure it’s a vegan cheese that melts well. You can also use tomato sauce instead of tomato slices if you prefer.

Ingredients

  • 2 Mushrooms, portobello - 22 calories

  • 1 Tomato, medium - 22 calories

  • 2 oz Cheese, sliced, mozzarella, full fat/ regular - 140 calories

  • ¼ tsp Basil, dried - 0 calories

  • ¼ tsp Oregano - 0 calories

  • ¼ tsp Salt - 0 calories

  • ¼ tsp Pepper - 0 calories

Instructions

Step 1: Preheat oven to 400 degrees F

Step 2: Line baking sheet with parchment paper, spray with oil spray

Bok Choy and Tofu Miso Soup

Ingredients

  • 5 oz Tofu, firm - 130 calories

  • 2 cups Leafy greens, bok choy, raw - 20 calories

  • 1 tsp Sesame seeds (tsp) - 6 calories

  • 1 tsp Red pepper flakes (tsp) - 0 calories

  • 2 cups Miso soup - 30 calories

  • 1 Tbsp Green onions - 1 calories

  • ½ cup Mushrooms, small, whole or sliced - 7.5 calories

Instructions

Step 1: Cut tofu into small cube shapes.

Step 2: Spray a pan with an oil spray.

Step 3: Stir fry tofu on low heat ~20 minutes, stirring occasionally, until all surfaces are browned.

Step 4: Spray the bottom of a pot with cooking spray.

Step 5: Add in mushrooms and bok choy – cook for 2 minutes on low heat.

Step 6: Add in miso soup and tofu, let simmer on low heat for ~10+ minutes, or until your soup gets to its desired temperature.

Step 7: Top with green onions (chopped), sesame seeds, and red pepper flakes.

Tomato Gnocchi Soup

Ingredients

  • 1 Cauliflower gnocchi, frozen, 1 serving - 140 calories

  • 2 cups Creamy tomato soup - 200 calories

  • 2 cups Leafy greens, spinach, raw - 14 calories

Instructions

Step 1: Cook gnocchi as instructed on package.

Step 2: Heat soup on stovetop in a pot on low heat, ~8 minutes.

  • ½ Onion, yellow - 27.5 calories

Instructions

Step 1: Cook lentils as instructed on package.

Instructions
